Chef Jon Velde
Chef de Cuisine
Raised in Carmel, Indiana Jon developed a passion for fine dining early in his career, which has now spanned over half his life. Jon discovered his love for cooking helping his mother in the kitchen and recalls meatballs with lots of spaghetti being a household staple. From those early days, he was captivated by the magic of turning simple ingredients into delicious meals.
At 14, he started cooking on the line at a local restaurant where he faced the realities of working in a fast-paced environment where pressure and expectations ran high. The energy and excitement of the professional kitchen quickly became addictive and Jon knew he had found his calling. Over the years, he honed his skills and immersed himself in the culinary world, transforming his early passion into over 15 years of commitment to the craft.
As Jon’s career progressed, he realized that his passion extended beyond just creating delicious meals. Moving to Steamboat Springs, Colorado in 2012 he discovered the profound impact food could have on bringing people together and providing for others while working at Café Diva with Chef Kate Rench. With this realization, Jon began to channel his energy into creating a vibrant and delicious nightlife for his childhood home.
Jon develops the menu and weekly specials for 3UP off of Anthony’s Chophouse’s menu with many of the same components of signature dishes creatively incorporated. You can find Jon in the kitchen at 3UP or downstairs at Anthony’s Chophouse assisting the culinary team and Executive Chef Aziz Mountassar. His aim is to create vibrant dining experiences that resonate with the Lazzara Restaurant Group’s dynamic spirit through his innovative approaches and commitment to quality.
When he’s not in the professional kitchen, Jon loves being outdoors and exploring nature. You can often find him on his bike or tending to his garden where he grows fresh herbs and vegetables. As the Chef de Cuisine at 3UP Rooftop Lounge, Jon is thrilled to share our unique menu with you. Let’s eat!
